WHITE WINE DRINKERS---- REJOICE!
Haifa, ISRAEL. Top researches in Israel have confirmed to
WineXplorer that they have found a way
to boost the anti-oxidant content of white wines sot that
they will deliver the same health benefits as red wine now
does.
Not only will this provide a more healthful alternative of
those who prefer the taste of white over red, but it is good
news for people who can't drink red wine.
Scientists have known for years that grapes, especially red
grapes, contain powerful anti-oxidants called polyphenols
that have shown a limiting factor to molecular damage of blood
vessels and perhaps other cellular damage. The problem, for
white wine drinkers, has been that these compounds are concentrated
in grape skins, and white wine is traditionally made without
using the skins or with very little juice-skin contact.
Researchers at Haifa's Technion-Israel Institute of Technology
in Haifa, Israel have now been able to increase the anti-oxidant
capacity of white wine by extracting more grape-skin polyphenols
during processing. Although this does not boost the level
of health damage preventing anti-oxidants to the same level
as is naturally in red wines, the scientists report similar
anti-oxidant activity between the two with little or no affect
on flavor.
Wine drinkers are not likely to see the results of this new
discovery in bottles of wine for some time. The methods will
be passed along to wine makers around the world but it will
take time to implement the process.
