Garlic
Tomatoes and oregano make it Italian; Wine and tarragon make
it French; Sour cream makes it Russian; Lemon and cinnamon
make it Greek; Soy sauce makes it Chinese; Garlic makes it
good.
Alice May Brock
of Alice's Restaurant Fame
It's a spice, a vegetable, a health supplement, some say it's a
wonder drug; whatever it is, or isn't, we love to eat it. While
some garlic fans go so far as to make teas and even ice cream from
it, we'd have to say that's fanatical and we won't go that far. Oh,
we'll keep a few cloves on a necklace to stave off werewolves but,
for the most part, it's a mainstay in many dishes that we
cook.
Mostly in the 90's we've seen roasted garlic, by itself, show up
on restaurant menus and the pungent cloves called out in more
recipes, in larger quantities, and more often. In this area, you
will find whatever you need to know, and a lot you don't, about
garlic, how to use it, what it does, how to grow it and everything
else about it.
